In Tunisia, there is more than 25 organized dried tomato units. However, the number of units operating in this area is much greater. With the exception of a few industrial establishments which use ovens, the other units in a traditional way (sun drying).
This activity is relatively recent and has grown rapidly. The annual production rise to an average of 6000 tonnes of dried tomatoes (equivalent to 60 000 tonnes of fresh tomato)
The packaging is done in 10 kg boxes with or without protective film. Small quantities are packaged in glass jars and seasoned with olive oil, garlic and other aromatic herbs… The tomato drying activity has achieved brilliant results by exporting nearly 6000 tonnes of dried tomatoes for a value of more than 30 million dinars in 2016 to 14 different destinations. However, Italy remains the main destination which imports about 80% of this volume.
This product is very popular in several international markets where demand is quite strong. Tunisia hasa number of advantages for developing its exports of dried tomatoes (agricultural production of quality tomatoes, favorable climatic conditions for drying, proximity to the main markets, quality …)
