Conserves de harissa

The harissa is the Tunisian product par excellence. Made from concentrated fresh red pepper, garlic and spices, the canned harissa is considered one of the most appreciated products of the Tunisian gastronomy and its popularity has long gone beyond borders. In fact, tested and estimated by millions of tourists, this product is becoming increasingly popular on the international market.

In terms of production, over the past ten years, it has been around 31 000 tons of finished product per year with a record figure of 34 000 tons in 2014.

25 of the tomato canneries are responsible for production, with a total processing capacity of about 3500 tonnes of fresh peppers per day, which process an average of 62 000 tonnes of pepper per year.

On the local market, demand for harissa has been relatively stagnant in recent years with an average of 15,000 tonnes/year, in contrast to exports that have increased from 4 500 tons in 2005 to 14 000 tons in 2018.
