The part of sardine (sardina pilchardus) and sardinelle (sardinellaaurita) remains important, accounting for about half of the blue fish fishery.
In recent years, processing has absorbed more than 30% of total sardine catches, with a record high of more than 44% in 2013.
The sardine processing sector has been dormant for a long time with limited activity in terms of quantity having never exceeded 3000 T and highly fluctuating due to insufficient and irregular raw material supply, an old industrial fabric and a lack of export of canned sardine products.
Thanks to the combined efforts of the stakeholders of the sector especially at the level of export development, a real revival of this sector resulted in positive impacts that began to manifest themselves from 2005 on the achievements of processing and exports.
The industrial fabric of this activity consists of 15 canneries, 12 of which are mixed (sardines and tuna), with a daily processing capacity of nearly 137 tonnes of fresh sardines.
