As of 12 November 2021, the canneries have processed nearly 80 thousand tons of peppers, which is equivalent to about 40 thousand tons of canned Harissa.

80% of these quantities were processed by the factories of the North West and Cap Bon, followed by those of the central region with nearly 15%.

We remind you that the 2020 campaign was closed with the processing of 68 thousand tons of peppers for a production of 34 thousand tons of canned Harissa.
