Dried Tomato is well known for its nutritional and gastronomic qualities. It is rich in fibre, vitamins, minerals and antioxidants… This product is becoming more and more important in our daily cooking.

Nowadays, almost 6% of the Tunisian production of seasonal tomatoes is destined for drying: about 70 thousand tons in 2020.

The sector ranks third among the most important products of the Tunisian food canning sector, after the double tomato paste and the harissa.

The major quantity of dried tomatoes produced in Tunisia is exported, for example in 2020 nearly 90% of production was exported to ten destinations of which Italy holds by far the first place with nearly 80% of the total volume.

Over the past five years, these exports have increased from 4,000 tons in 2015 to almost 6,000 tons in 2020, recording a rise of 50%.
